
Roasted Green Beans and Shallots
When I was a kid, my family used to grow green beans in our garden. They were fresh picked and sweet but frankly, I always thought they were a little boring. We usually just boiled or steamed them and added a little butter and salt. However, in the last couple of years I’ve started experimenting with different ways to prepare them and now they’re one of my favourite side dishes. They are particularly good with poultry dishes like roast chicken and turkey. Many people make the classic soup-based Green Bean Casserole for Thanksgiving but it can be quite high in fat and calories. Roasting the beans with shallots and a small amount of oil brings out their sweetness and a quick sprinkle of sea salt and fresh lemon juice adds the final touch. It’s a delicious lower-fat option for the Thanksgiving table (or any meal, for that matter!). It’s also gluten-free and vegan friendly so everyone can enjoy a taste.
